Sweet Potato Pizza

The comfort food to trump all comfort foods.

  • Serves: 2-4

Ingredients:

  • 2 cups sweet potatoes, mashed
  • 1 cup cassava flour
  • 1/4 cup arrowroot flour
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp basil
  • olive oil

Directions:

  • Place pizza stone in oven and preheat to 450º
  • Start with your mashed sweet potatoes in a mixing bowl.
  • I prefer to cook my sweet potatoes much beforehand and allow them to cool in the fridge first as they are less liquidy and require less flour to be moldable. If you were unable to make them beforehand, that’s fine. You may just need a bit more flour.

  • Here I used white sweet potatoes as they are a bit starchier than yams and also require less flour.
  • Add cassava flour and arrowroot flour to mashed sweet potatoes until you are able to form a dough ball. I recommend adding cassava in 1/4 cup increments and arrowroot in 1 Tbs increments. Be intuitive. Do what feels right.

  • When I used the white sweet potatoes, I was able to use a little less than 1 cup of cassava flour.
  • Once you have the dough the consistency you want, add the seasonings.

  • Remove the pizza stone from the oven, coat lightly in olive oil, and spread your dough out to the shape of the stone.
  • Cook for 15 minutes.
  • Do max rep jumping squats while holding something heavy (medicine ball, kettlebell, small child, overweight cat)
  • Remove pizza from the oven and add your desired sauce and toppings.

  • Here I used pesto and ranch as my sauce and topped with broccoli, cauliflower, black olives, and Mozzerella cheese.

  • Return pizza to the oven and cook for another 5 minutes, or until cheese is melted.
